So last night I had taco meat and no tacos so I got inspired and googled what to do with left over taco meat. I made this yummy taco mac and cheese.
Recipe:
1 lb ground beef (or meat substitute for Kristy)
1 packet taco seasoning
1 Box of large shell pasta
2 cups monterey jack cheese
1/2 cup Fat Free Half & Half
1 Can diced italian tomatoes
1 teaspoon or more Mexican Chilli powder.
Instructions:
Brown Ground Beef
Drain Fat
Add Taco Seasoning Packet (Follow instructions)
Cook Pasta to directions
Combine all ingredients (setting 1 cup of cheese aside for the top) in a pot.
Place entire ingredients in a non stick baking dish.
Top off with remaining cheese
Bake for 20 - 30 minutes at 350 or until bubbly.
