Something to Try Tomorrow

I was going to try these tomorrow, but no heavy cream, so it'll be something else with cranberries, but I can do the apples.

Here is recipe I tore out of Country Living, from an article about Finland. This sauce would probably be good on just about anything.

Cranberries with Caramel Sauce

4 servings

2 cups heavy cream
1/2 cup firmly packed light-brown sugar
2 cups frozen cranberries

Heat oven to 350 degrees. In a large oven-proof skillet, heat heavy cream and sugar to boiling, stirring constantly. Place skillet in oven and bake, stirring occasionally, for 40 - 55 minutes or until mixture is thickened and saucey. (they think that's a word) Keep warm. Just before serving, place the cranberries in a serving bowl and pour the warm sauce over them. Serve immediately.

Something to do with maple syrup. I wouldn't peel them, because I don't usually.

Maple Glazed Apples

4 golden delicious apples, (peeled) and cut 1/4 inch thick
2 tbsp butter
3 tbsp grade B maple syrup
1 tbsp water
1 tsp fresh lemon juice
1/4 tsp cinnamon
(Dash of nutmeg)

Saute the apples in butter until golden and tender. Stir in syrup, water, lemon juice, and cinnamon. Add a pinch of salt and cook until the apples are glazed, stirring as needed.

I make the maple glazed apples — delicious with pork chops. Also nice prepared sliced in rings and served with a scoop of vanilla bean or ginger ice cream on top. Looking forward to trying the cranberry recipe!

I added a little salt to the caramel sauce because it needed something. Rum might have worked, too. It tasted better on partially thawed mixed berries than the cranberries.

This sounds great, particularly the sauted apples.

I really like apples cooked in just butter, seasoned with salt, served as a vegetable with breakfast sausage or pork. I'll see if the additional ingredients make them better.
