Sunday Night Noodles

From "Mr. Food" (reminds me of greatmartin). I've got all of this but the sour cream, and I'm thinking of substituting low fat cream of chicken soup for that, for the moisture.

Sunday Night Noodles

8 servings

1 pound medium egg noodles
1 (10-ounce) package frozen chopped spinach, thawed and drained
2 cups cottage cheese
1/2 cup grated Parmesan cheese
1 cup sour cream (or cream soup)
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon butter, melted
1/4 cup dry bread crumbs

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.

In a large pot of boiling salted water, cook noodles to desired doneness; drain.

In a large bowl, mix thawed spinach, cottage cheese, Parmesan cheese, sour cream, salt, pepper, and Italian seasoning. Stir in noodles then spoon mixture into prepared baking dish.

In a small bowl, combine melted butter and bread crumbs. Sprinkle over noodle mixture then bake, covered, for 45 minutes.

For variety, you can add chopped parsley, scallions, dill or caraway seed. Make it your own and make it different every time.

Here the Stellar's Jay is contemplating tuna noodle casserole. They love it.

Okay, so I made this, and used too much spinach. The jays weren't as enthused with the leftovers, they picked around the spinach, and the excess ended up on the riverbank because the fox isn't a big fan of spinach, either. But it's a good recipe even without sour cream, and I recommend it.

I was surprised at how enthusiastic those jays were about those noodles, but it was hard to get a picture of them because they are so shy and notice any movement in the house.
