Spicy Cheesy Squash Casserole

Supposedly this is only 85 calories per serving, if you eat 1/12 of it, about 1/2 cup.

1 1/2 pounds yellow summer squash, sliced
1 medium onion, chopped
1 (4 oz) can diced green chilies
2 tablespoons flour
1/2 cup Monterey Jack cheese, grated
1 egg
2/3 cup low-fat cottage cheese
1/3 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1/4 teaspoon black pepper

Spray a skillet with cooking spray and saute the sliced squash and onion until tender-crisp. Fold in the chilies, and flour. Place in a 2-quart baking dish sprayed with cooking spray. Sprinkle with the Jack cheese. Combine the egg, cottage cheese, parsley and pepper. Layer over the cheese and sprinkle with Parmesan cheese. Bake uncovered at 400 degrees for 25 minutes, until heated through. Makes 12 servings, 1/2 cup each.

With the three cheeses and the egg, I think this could work as a meatless entree in larger portions

I just hate to pay good money for squash when in a few months people won't be able to give it away.

Sounds lovely, and a little different from the usual summer squash recipe. I might even buy some of that squash to make it.
