Shoo Fly Cake

My father-in-law loves shoo fly pie. The primary flavor is molasses, and it is an acquired taste for many people.



I make it as a cake because it's less work, and we don't miss the crust.

Shoo Fly Cake

1 cup brown sugar
1/2 cup butter
2 cups flour
1 cup molasses (can use part Karo syrup)
1 cup boiling water
1 teaspoon baking soda
1/2 teaspoon salt

Mix brown sugar, butter, and flour until crumbly. Reserve 1 cup. Arrange the remaining crumbs on the bottom of an 8 by 8 inch square baking pan and press down. Mix all the remaining ingredients well and pour over the crumbs. Top with the reserved crumbs. Bake at 350 degrees for 30 - 35 minutes, until cake pulls away from the sides of the pan. This can be made in two pie plates, where it resembles a pie with a graham cracker crust.

This is 1/2 of the recipe that is supposed to make an 9 by 13 inch cake and take 45 minutes to bake. I made the full recipe once, and it made 3 of the 8 by 8 inch pans.

Serve warm with ice cream or whipped cream if desired.

You might find it too sweet and heavy because the Pennsylvania Dutch recipes tend to be hearty, and you eat light. It has a strong molasses flavor and is a bit like gingerbread.

The flavor of molasses is an acquired taste. My father loved it.

My grandad used to get sorghum syrup from Missouri, and I think it'd be fun to try it with that some time.

What a unique version! I think I'd like this better than the pie. Thanks for sharing! Just got back from a long visit with my sister-in-law, who's in hospice. Looking forward to catching up on your yummy posts.

I have been thinking about you being at your sister-in-law's, and am glad you are back, but glad you were able to go for a visit. This cake version really is better than the pie because it tends to be moister. I have tried many shoo fly pie recipes, and they can be too dry. Well, especially the 'dry type' hah! There is an Amish recipe for a vanilla crumb pie that is shoo fly with dark Karo syrup instead of molasses.
