Salmon

I found a good marinade for fresh salmon.

Honey Mustard Salmon

1/4 cup olive oil
1 tablespoon honey
2 tablespoons Dijon mustard
3 cloves garlic, minced
1/4 - 1/2 teaspoon cayenne (recipe said 2 tsp)
1/2 teaspoon ground coriander
2 tablespoons lemon juice
Salt

Dill for garnish

Combine and marinate the salmon in it for 30 minutes at room temperature. Bake at 350 degrees for 6 to 7 minutes per side. Garnish with dill. If you want, take a little bit of the marinade and heat it up for a sauce.

This is half of the recipe I found and was enough for 2 or 3 fillets.

Grilled Salmon with Bourbon Sauce

1/4 cup pineapple juice
2 tablespoons soy sauce
2 tablespoons brown sugar
1 teaspoon Kentucky bourbon
1/4 teaspoon cracked pepper
1/8 teaspoon garlic powder
1/2 cup vegetable oil
Salmon fillets
Snipped fresh chives

Combine pineapple juice, soy sauce, sugar, bourbon, pepper and garlic powder and stir to dissolve sugar. Add oil. Marinate salmon for at least 1 hour up to 4 hours. Grill.

Cook fish on an oiled grill, skin side down, for the first part of the cooking time. The skin protects the fish from burning and drying out. It also can provide natural oils to your grill, so when you flip it, it doesn’t stick.

I thawed out three portions because I thought company was coming, so had a chance to try various recipes. Today I substituted fresh grated ginger (from a tube) for the garlic.
