Really Low Fat Garlic Bread

Here is a recipe for garlic bread that came from Eating Well magazine, and is supposed to be really low fat. In fact, that's the name of the recipe:

Really Low Fat Garlic Bread

4 large cloves garlic
1 teaspoon olive oil, preferably extra virgin
1/4 teaspoon salt
1/2 baguette, cut in half lengthwise

Preheat oven to 450 degrees. Put garlic in a small saucepan with enough cold water to cover and bring to a simmer over low heat. Cook 3 minutes and drain. In a small bowl, mash the cooked garlic, oil and salt with the back of a spoon until a smooth paste forms. Spread the mixture over the cut surfaces of the bread. Place the bread on a baking sheet and bake 4 to 6 minutes, or until the bread begins to brown around the edges. Slice and serve.


It seems like something as junky as frozen chicken nuggets should be heated up and served plain with catsup or barbecue sauce. But if someone were to hand me a bag of chicken nuggets right now, I'd probably make this recipe to see if maybe it's worth eating. The least you can do is try to find one of those spicy canned spaghetti sauces so it might have a hope of tasting good.

Chicken Nuggets Parmesan

1 (13 oz) package frozen chicken nuggets
1/3 cup grated Parmesan cheese
1 (26 oz) can spaghetti sauce
1 cup mozzarella cheese, shredded
1 teaspoon Italian seasoning

Place the chicken nuggets in a greased 11 by 7 by 2 inch baking dish and sprinkle with the parmesan cheese. Top with the spaghetti sauce, mozzarella cheese, and Italian seasoning. Cover and bake at 350 degrees for 30 to 35 minutes or until the chicken is heated through and the cheese is melted.

That chicken parm recipe sounds a little dodgy, as they would say in England, but it might be a culinary triumph where the sum of the parts exceeds the individual ingredients.

It sounds so good. Don't buy your Italian seasoning at Aldi's. It tastes
like it has sage in it. I ruined a lasagna using it.
