Peanut Butter Spritz Cookies



The above is supposed to be a little scene. There is the camel jockey out front, the woods represented by tree templates and the herd of camels.

I made these peanut butter cookies shaped like camels using my Wilton cookie press. The dough was the exact right consistency to easily come through the press. One click of the handle made one nice camel.



This is a closeup of the cookies. You can still see the shape of the template. It looks like we're viewing the camels in a TSA scanner - we can see their backbone.



Okay, here's the recipe. It came with my Mirro Cooky Press.

Peanut Butter Spritz

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 cup peanut butter
1 tablespoon hot water
1 1/4 cups sifted flour
1/2 teaspoon baking soda
1/4 teaspoon salt

Cream butter and sugar well. Beat in egg, peanut butter, and hot water. Gradually blend in dry ingredients which have been sifted together. Fill cookie press and form cookies on ungreased cookie sheets. Bake 10 to 12 minutes at 375 degrees.


Green trees from the cookie press is more traditional for Christmas:

Christmas Tree Spritz

1 cup butter
3/4 cup sugar
1 egg
1 teaspoon almond extract
1/4 teaspoon salt
2 1/4 cups sifted flour
1/4 teaspoon baking powder
Green food coloring

Cream butter and sugar well. Beat in egg and almond extract. Gradually blend in dry ingredients which have been sifted together. Tint dough with the food coloring. Fill cookie press and form cookies on ungreased cookie sheets. Bake 10 to 12 minutes at 375 degrees.

Usually I have a lot of trouble with the dough being too stiff, and it's a giant mess, but this one went well.

I adore spritz cookies. I've made gazillions of them over the years, and I still use my Mom's old cookie press from the 1950s. Loved making them with her especially.

I like spritz cookies because you can get shapes without the hassle of rolling out the dough and re-rolling the scraps. To me, drop cookies are the most boring thing in the world. Okay, maybe not the whole world or the most, but darn close.
