I like the sound of this sauce.
Crispy Lemon Chicken
1 tablespoon corn starch
1/4 cup lemon Juice
1 teaspoon grated lemon rind
1 1/2 cups chicken stock
1 teaspoon grated ginger
1 tablespoon brown sugar
2 egg whites
1/2 cup corn meal
1/2 cup flour
2 tablespoons water
3/4 pound chicken tenderloins
2 tablespoons oil
chopped spring onion for garnish
Mix corn starch with the lemon juice. Mix the lemon rind, stock, ginger, brown sugar, and corn starch mixture together in a saucepan.
Bring to the boil and cook for 1 minutes. Set aside while preparing chicken.
Lightly beat together the egg whites and water. Then mix together the flour and cornmeal. Dip the chicken in the egg white mixture, and then in the flour mixture to coat evenly.
Heat the oil in a wok or frying pan and fry the chicken until the juices run clear.
Pour over the lemon sauce and served garnished with chopped spring onion.
I received an email: "Mother's Day Potluck Recipes." I suppose this is for when the various family members have a potluck at mom's house so she doesn't have to cook. I always thought the thing was to take her out to dinner somewhere nice so she didn't have to even think about cooking and dishes.
This next recipe is for Marg, or more accurately her husband. She'll know why.
Cheesy Hobo Potatoes
1 can (10.75 ounces) Campbell's Condensed Cheddar Cheese Soup
1/4 cup milk
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
4 cups frozen steak fries
paprika, to taste
Stir the soup, milk, garlic and onion in a large bowl. Stir in the potatoes.
Place the potato mixture on 4 (14-inch) squares of heavy-duty aluminum foil. Sprinkle with paprika. Fold the foil to make packets.
Heat the grill to medium. Grill the packets for 25 minutes or until the potatoes are tender.
When's the last time you had 3 bean salad? There's not much to it, and most people just buy it at the deli. Here's how it's made in case you ever want to see if homemade is better:
3 Bean Salad
1 can green beans
1 can yellow wax beans
1 can red kidney beans
1 cup chopped celery
1 green pepper, chopped finely
1 onion, chopped finely
Mix the chopped vegetables and let them stand overnight in 3/4 cup sugar in the refrigerator.
Dressing: 1 teaspoon salt, 1/2 teaspoon coarse blk pepper, 1/3 cups vegetable oil, 2/3 cup vinegar.
Add to vegetables.
This can be varied by the type of vinegar that you use, herbed or wine vinegars are nice.
You can also substitute garlic salt for plain salt or just add chopped garlic.
I'm not posting the exact recipe for Cinnamon Roll Whoopee Pies. You take Pillsbury Grands cinnamon rolls (baked), split them, and put a cream cheese filling inside.
Personally, I would take some cinnamon rolls, split them, butter the halves, and grill them. It depends on your recipes as to whether you need cream cheese frosting to spread on them.
