Marvelous Mushrooms

These recipes are from The Four Ingredient Cookbook.

Marvelous Mushrooms
1 pound fresh mushrooms, remove stems
2 tablespoons oil
2 1/2 tablespoons chopped garlic
2 tablespoons soy sauce

Heat the oil in a frying pan and add the garlic. Cook about 4 to 6 minutes over medium-low heat, until just softened. Don't let it burn. Add mushrooms and cook 2 to 3 minutes. Stir in the soy sauce and serve immediately.

Stir Fried Mushrooms with Bacon

4 slices bacon, cut in 1/2 inch pieces
8 oz fresh mushrooms, sliced
1/4 cup cooking sherry
(1/4 cup finely chopped onion)

Stir fry the bacon until crisp. Remove from the pan, leaving the drippings. Add the mushrooms and chopped onion. Stir fry for 5 to 10 minutes, until mushrooms are cooked. Drain off excess fat. Add wine and bacon and simmer for 3 minutes.

I like the flavor of sherry with meat. When I use it in beef stroganoff, it gives such a rich flavor. I'm guessing it's good with these mushrooms, too. I might be tempted to stir in some sour cream to make a creamy side dish.

I like portobello mushrooms done in the style of a hamburger, but I'm working on how to fix these plain old white ones I've got in the fridge.
