Back in February I posted some recipes from Nora Ephron's novel, Heartburn.
Here is another one. Linguine alla Secca is pasta with a cold tomato-basil sauce, something different that would be good on a hot day, and it's best with fresh tomatoes, so this might be a little premature.
Linguine alla Secca
Drop 5 large tomatoes into boiling water for one full minute. Remove all from the water. Peel, seed, and chop. Put in a large bowl with 1/2 cup olive oil, a garlic clove cut in two, 1 cup chopped fresh basil leaves, salt, and hot red pepper flakes. Let sit for a couple of hours, and remove the garlic. Boil one pound linguine, drain and toss with the tomato mixture. Serve immediately.

French Bread Garlic Cheese Spread
1/4 cup butter
1/2 cup Parmesan cheese (or Cheddar)
1/2 cup mayonnaise
1/2 cup minced onion
Dash of Worcestershire sauce
2 drops Tabasco
1 loaf French bread, sliced in half lengthwise
Combine all ingredients except the bread and mix thoroughly. Spread on the bread halves. Wrap sides of bread loosely in foil, leaving the top exposed. Bake 10 to 15 minutes at 350 degrees. Slice before serving.

Romaine with Frozen Vinegar
1/2 cup red wine vinegar, frozen solid in a bread pan
1 head Romaine lettuce
Olive oil
Black pepper, freshly ground
Parmesan cheese, freshly ground
Freeze the wine vinegar in a metal bread pan in the freezer for 2 hours or overnight. Cut the Romaine in half lengthwise. Place the grated cheese in an oblong baking dish, such as a lasagna pan. Brush the lettuce cut side with olive oil and sprinkle with black pepper. Heat a stove-top griddle. Dip the cut side in the grated cheese, pressing down to coat well, then place on the hot griddle and press down to make contact. When the cheese has melted and is golden brown, remove from heat and place un-cut side down on a chilled sheet over some ice to keep chilled. Use a fork to cut the frozen vinegar into small pieces. Spoon on top of the cheese and serve immediately.
