Lemon Oatmeal Cookies

Chewy cookies with a nice lemon flavor.

2 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter
2 cups sugar
2 eggs
2 teaspoons grated lemon rind *
3 tablespoons lemon juice
1 cup rolled oats (quick cooking)

Combine the flour, baking powder, and salt. Cream the butter and sugar until light colored and fluffy. Stir in the eggs until combined. Mix in 1/2 of the flour mixture. Add the lemon rind and lemon juice. Stir in the rest of the flour and the oatmeal. Form into small balls and place on greased cookie sheets. Bake 8 to 10 minutes at 350 degrees.

The recipe says to refrigerate the dough for a couple of hours. I did this, and it was like concrete and I took little wads of it and warmed them up with my hand to make the balls, so I wonder if you can get away with forming it without chilling, but it might be too soft.


*I used dried lemon rind and soaked it in the lemon juice before mixing with the other ingredients.
