Green Tomato Breakfast Cake

This is out of the Sunday supplement that came in the newspaper. I might try it instead of a green tomato pie.

Cooking spray
1/3 cup butter, softened
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
2 green tomatoes, cored and cut into eighths
2 teaspoons sugar
1/2 teaspoon cinnamon

Preheat oven to 350 degrees. Coat a 9-inch round cake pan or baking dish with cooking spray. Combine butter and sugar and beat with a mixer at medium speed until fluffy. Beat in eggs and vanilla. Combine the flour, baking powder, and salt. Sift into the butter mixture; beat well. Spoon batter into the prepared pan. Arrange the tomatoes in concentric circles over the batter. Sprinkle lightly with sugar and cinnamon. Bake 50 minutes to 1 hour until cake is firm and golden. Serves 8, 210 calories per serving.

I have green tomatoes left on the plants, but it looks like the recent rains have reactivated the blight from last summer. I will need to find a use for the green tomatoes that survive tho, and this looks like a better choice than frying them.

A deer came by and ate my last little green tomato on the vine and the leaves off the plant. They have stayed away all summer, so this is okay.

That sounds wonderful! I should know this, but do they sell green tomatoes at grocery stores?

No, I don't think they do sell them at the store. Next year you need to plant some tomatoes in a pot on your patio. It reminds me that I am ashamed to buy zucchini at the store because it means I have no friends to give me some out of their gardens, or that my friends are such slackers they don't have gardens. It'd be the same thing with green tomatoes.
