I'm sure there are many versions of this out there, but here is one. This is one dish that seems to have more reputation than it deserves, but it is not from my region. Maybe southerners have more reverence for it than I do.
Fried Green Tomatoes
3 green tomatoes, sliced
1 cup flour
1/2 cup cornmeal
1 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Creole seasoning, optional
Soak the tomatoes in water with 1 teaspoon salt for 30 minutes. Mix flour, cornmeal, seasoned salt, garlic powder, and pepper in a pie pan or shallow dish. Dip the tomatoes in it, coating them completely, and place on a rack for 15 to 20 minutes. Put 1/4 stick butter in a skillet and heat to 350 degrees. Brown the tomatoes on both sides until golden. Drain on paper towels and sprinkle with creole seasoning if desired.
It is interesting that the recipe tells us to heat the skillet to 350 degrees because how are you going to know? I would say 'good and hot' is about 350 degrees. If you are deep fat frying, cookbooks will tell you that 350 degree deep fat will ignite a match that is dropped into it. Just think about that.
