Easy Homemade Candy Recipes

Peanut Butter Pretzel Bites
1 cup chunky peanut butter
1 cup confectioners' sugar
1 tablespoon butter, softened
2 cups pretzels, crushed
1 cup chocolate chips

Line a rimmed baking sheet with wax paper.
In a medium bowl, stir together peanut butter, confectioners' sugar, butter, and pretzels. Roll into 1-inch balls and place on prepared baking sheet.
Freeze 30 minutes, or until firm.
In a small microwaveable bowl, microwave chocolate chips at 30 second intervals, stirring until chocolate is melted and smooth. Place chocolate in a resealable plastic bag, snip off corner with scissors, and drizzle over pretzel bites. Refrigerate until set.

Ritz Cracker Candy

About 24 round buttery crackers
3/4 cup butter (1-1/2 sticks)
3/4 cup packed brown sugar
2 cups semisweet chocolate chips
1/2 cup chopped pecans

Preheat oven to 350 degrees F. Line a 9- x 13-inch pan with aluminum foil; lightly coat foil with cooking spray. Arrange crackers in a layer in pan.

In a medium saucepan, bring butter and brown sugar to a boil; cook 3 minutes, stirring constantly. Pour mixture over crackers.

Bake 5 minutes; turn off oven. Sprinkle crackers with chocolate chips and let stand in oven 3 minutes, or until chocolate is melted. Spread chocolate evenly over crackers. Sprinkle pecans over chocolate. Let cool, then break into pieces. Store in an airtight container in refrigerator.

I'm not sure why this next recipe is called Honeys - there's no honey in it - still good, though.

1 package graham crackers
1 stick butter
1 stick margarine
1/2 cup sugar
Sliced pecans (or other nuts)

Break graham crackers into 4 pieces (as scored) and line a jelly roll pan as close as possible. Melt butter and margarine. Add sugar. Boil for 2 minutes only. Pour over graham crackers, and spread gently. Sprinkle sliced pecans over the mixture. Bake in 325 degree oven for 12 minutes. Remove immediately and cool on waxed paper. Separate when removing from pan, as they stick together quickly.
