Detox Soup

As my mother would say, 'this will cure what ails you.' I looked, and that miso paste is an important part of the detox part of it. I don't know what it tastes like. I hope they sell it in small packages in case I decide to buy some.

Slow Cooker Detox Soup
Makes: 4 servings
Cooking Time: 8 hr

1 onion, diced
1 carrot, diced
1 cup Brussels sprouts, sliced in half
1 cup baby bok choy, chopped
1 cup cherry tomatoes, chopped
1 cup parsley, chopped
5 celery stalks with leaves included, chopped
1 zucchini, diced
2 cups purified water
3 garlic cloves, minced
1/2 inch piece of ginger, minced
1 tablespoon miso paste

In a slow cooker, put all ingredients in, and cook on low for 8 hours.

If you don't use a slow cooker, put all the ingredients in a large pot and bring to a boil, then simmer for 35 minutes or until vegetables are tender.

Lean Ham with Beans


Serves: 3
Cooking Time: 8 hr
12 ounces dried beans
5 cups water
2 cups lean ham, diced
1 cup celery, chopped
1 cup onion, diced
1/2 cup carrots, minced finely
1 teaspoon seasoned salt
2 teaspoons low sodium beef soup base or bouillon
1 teaspoon low sodium chicken soup base or bouillon
1/4 teaspoon red pepper flakes
1 pinch dill weed
1 pinch caraway seeds
1 clove garlic, minced

Soak beans overnight or boil on stovetop for 10 minutes prior to adding them to the slow cooker. Combine beans, water, ham, celery, onion, carrots, seasoned salt, beef base, chicken base, red pepper flakes, dill, caraway and garlic in slow cooker. Cook on low eight hours or until beans are tender.
Variations: Use 4 cups water for baby lima beans. Use 2 tablespoons dried vegetables in place of 1 cup fresh. Use 1 tablespoon dried carrots in place of fresh.

This is all fine and yummy sounding, but one needs all the ingredients. Now who would purposefully go to the supermarket and buy bok choy, a zuke, celery, cherry tomatoes, etc., to make this? It depends on what I have available as to whether I prepare some "exotic" dish. Besides, I prefer simplicity! But thanks anyway. I try to keep up on your recipes.

It's really out there, isn't it? I think a person could leave out some of these ingredients, but I think the garlic and the miso might be important for the de-tox part of it. In other words, they give some people the trots if they eat enough.
