Cravings

We all try to eat healthy foods and avoid between meal snacks, and all those good things that New Year's Resolutions are made of. But once in awhile, a person gets a craving. Here are some quickies.

Praline Grahams
1 package graham crackers
1/2 cup sugar
3/4 cup butter or margarine
1 cup chopped pecans

Separate each graham cracker into four sections. Arrange in a jelly-roll pan with edges touching. Melt butter in a saucepan; add sugar and pecans. Bring to a boil and cook 3 minutes, stirring frequently. Spread mixture over the graham crackers evenly. bake at 300 degrees for 12 minutes. Remove from the pan and let cool on waxed paper.

Faster alternative:
Break the graham crackers into small rectangles and dunk into cold milk. For some heft, pile one little rectangle on top of another one.

No carb alternative:
Celery with Peanut Butter
Stuff celery sticks with peanut butter.

Some people put raisins on the peanut butter and call it "Ants on a Log."

Tiny Quiches
12 round butter-flavored crackers (Ritz)
2 eggs, beaten
1 cup (½ pint) heavy cream
2 cups (8 ounces) shredded Swiss cheese, divided
1/3 cup chopped deli ham

Preheat the oven to 400°F. Coat a 12-cup muffin tin with nonstick cooking spray. Place one cracker in the bottom of each muffin cup. In a medium bowl, combine the remaining ingredients; mix well and spoon into the muffin cups. A small ice cream scoop is handy for this. Bake for 18 to 20 minutes, or until golden. Serve immediately.

No deli ham on hand? Use real bacon bits instead to make mini quiche lorraines.

Hers was no doubt left-over homemade frosting, or at least made from scratch. I shudder to think of people buying tubs of frosting and slapping it between two crackers and calling that good. Today we were looking at a "S'mores Kit" priced at $14 and change. It was supposed to make 36 of them, had 1 bag marshmallows, 18 full-size Hershey bars, and some graham crackers. Then, we happened to be at the grocery store and all the components were set out together - $12 and change to buy the parts. Very interesting.

I'm glad there aren't any graham crackers in the house right now, or I'd be making that praline recipe and melting some choco chips on top.
