Cookie Bars

I put a star next to this recipe, so I must have made it once and liked it. One thing I do like is that it's ingredients I always have on hand.

Butterfinger Bars
1 cup brown sugar
1/2 cup white sugar
1 cup margarine (or butter)
4 cups quick oatmeal
6 oz chocolate chips
3/4 cup creamy peanut butter
1 teaspoon vanilla or burnt sugar extract

Mix the first 4 ingredients together and press into a 9 by 13 inch pan. Bake 15 minutes at 350 degrees. Melt the chocolate chips and stir in the peanut butter and flavoring. Spread over the bars when done and let cool.

My father and his second wife died in a small plane crash in April 2002 and I live in his house now. They left a huge jar of maraschino cherries in the fridge and I still have it. Here's a recipe that would use some of them up.

Cherry Walnut Bars

Crust:
2 cups flour
1 cup powdered sugar
1 cup butter
Combine and pat into a greased jelly roll pan. Bake 12 minutes at 350 degrees.

Filling:
4 beaten eggs
1/4 cup flour
2 cups brown sugar
1/2 cup maraschino cherries, chopped
1/2 cup nuts, chopped
1 cup coconut
2 teaspoons cherry juice

Combine the filling ingredients and spread over the baked crust. Bake for 20 to 25 minutes.

Okay, this next one is healthier. The topping might make a good frosting for carrot cake.

Oatmeal Bars with Raisin Topping
1 1/4 cup boiling water
1 cup quick oatmeal
1/2 cup margarine or butter
1 cup brown sugar
1 cup white sugar
1 teaspoon cinnamon
2 eggs
1 teaspoon salt
1 1/2 cups flour
1 teaspoon soda

Pour boiling water over the oatmeal and butter. Let stand for 20 minutes. Mix flour, soda, white sugar, brown sugar, cinnamon, and salt. When the hot mixture has cooled, add the eggs and flour mixture, mix well, and put in a 9 by 13 inch pan. Bake at 350 degrees for 25 minutes.

1 1/2 cup raisins
1 cup sugar
1/3 cup milk
2 tablespoons flour
1 cup powdered sugar
2 tablespoons butter
2 teaspoons vanilla

Mix the raisins, sugar, milk, flour, and butter and boil for 3 minutes. Cool and add the powdered sugar and vanilla. Spread on the cake and cut into bars.

My favorite way to use up maraschino cherries is in whiskey sours.

Last summer I had one of those big jugs of sweet sour mix taking up room in my fridge right next to that half gallon of cherries, and I always forgot to use it (not a big drinker) but then I discovered it makes really good lemonade, but I still forgot to put a cherry in each serving of it. This summer I've resolved to make some ice cream dessert involving stirring chopped up cherries into softened ice cream and then re-freeze it with some other flavors, similar to spumoni.
