Chicken Cacciatore

Well, here I thought I'd had an original idea today when I decided to make chicken cacciatore. Looks like I posted the recipe last August. It bears repeating, and that's what we had for dinner tonight.

Chicken cacciatore is bone-in chicken simmered in a sauce made with onions, bell peppers, and garlic (of course). It's a little messy to eat, wrestling the meat off the bones in all that sauce, but something about it makes the dish all the more satisfying.

With it I served steamed broccoli and some corkscrew pasta that really held onto that sauce. Also, some artisan bread type dinner rolls, fresh from the oven.

So, once again, we breathe a sigh of relief because another meal has been successfully accomplished. And our only worry is what are we going to have for lunch tomorrow.

Boneless skinless chicken breasts are less messy, but I don't think they have the flavor of the pieces cooked with the bone in.

I never had it until just a few years ago, but like it. It'd be nice to taste someone's version of it who makes it all the time.
