Cheese Buttons

Several years ago I brought home a shopping bag full of old wall calendars from an estate auction. My idea was that I'd track what the family wrote over the years and come up with a plot for a novel. The other day I finally got around to entering all the notes into a spreadsheet (works like a database). There was less information than I'd expected, but I got some good clues. These people had a lot of activities - church, girl scouts, high school sports - but they didn't write down every little thing, in the 20 years of calendars, there were only references to the scouts.

One thing they did keep track of was when they had guests for dinner or went to someone else's house for dinner. And in those twenty years, aside from mentioning fish dinners, they mentioned cheese buttons three times. One time the whole family was there and 70 cheese buttons were consumed. I googled it, and here is the recipe.




They are shaped like ravioli, so I don't know why they call them buttons.


KASE KNEPFLA (CHEESE BUTTONS)

Flour
Salt
Eggs
Water
Dry cottage cheese
Pepper
Onion

Make filling of 2 c. dry cottage cheese, 2 eggs, onion, salt, and pepper.
Make a dough of 3 cups flour, 1/2 teaspoon salt, 2 eggs, water to make a soft dough, roll to 1/4 inch thick cut in 4 inch squares, place a spoon full of filling on a square, place second square on top and seal.
Drop into boiling water to which a tablespoon of salt has been added. Boil about 10 minutes, drain and dry in butter.

This is very much like a Russian dish that Ellie says is a feast day
dish. She fills it with hamburger instead of the cheese filling. It is
evidently a treat saved for weddings and celebrating the New year. I am
sure that she was disappointed in her wedding here. In Russia, it is a
three day celebration.

I have yet to make that dough wrapped in beet leaves, but I did look at the beet leaves in the store thinking about it.

Interesting! Like you said, they sure don't look like what you'd expect!

I once bought a calendar at a garage sale for the pics. I couldn't help but read the little notations on it. There was a lot there!

There were whole months with no notes at all, and I wondered why not.
