Cajun Corn Pudding

I think I got this recipe from Diners, Drive-Inns, and Dives. I don't know the amounts, just use your instinct.

Cajun Corn Pudding
Corn from the cob
Olive oil
Salt
Cayenne pepper
Cooked bacon
Onions
Green peppers
Egg
Cream
Milk
Nutmeg
Sugar
Black pepper
Parmesan cheese
Cornmeal
Butter for pan
Bread crumbs for coating pan

Saute the corn with the salt, cayenne, bacon, onions, and green pepper. Combine egg and seasonings, add corn and cornmeal. Coat buttered pan thickly with bread crumbs. Stir the corn mixture well before putting in the pan. Bake 45 minutes at 375.

Here is what I ended up making the other night, inspired by the above:

Sauteed Corn with Bacon
Use frozen corn if you don't have fresh. Cut raw bacon into 1/2 inch pieces and saute it with the diced onions and green pepper until bacon is what you consider cooked and the vegetables are transparent and soft. Add 1/4 teaspoon ground cumin, salt and pepper. Stir in the corn, and saute it until heated through and browned a little bit.

Back when I was a kid, my mother made fried shrimp with a soft, puffy coating, and fluffy deep-fried onion rings. Then we got a recipe from The Joy of Cooking where the onions were soaked in milk, then shaken in flour and fried. It was a nice change. There are a couple of buffets in Las Vegas that serve real onion rings (as opposed to assembled minced onion).

I've got the corn. Might try the latter idea tonight. I might like that show if I could stand the host (forgot his name). No, I wouldn't like the show, even if he wasn't the host. Too "mybloggers" (pardon the play on words) for me. The History channel had a long show on last night about fried foods. Ugh. I about got sick.

There are a lot of Food Network shows I don't watch because I don't like the hosts, a shame because the recipes might be interesting. Maybe it's an age thing with us.
