Cabbage Rolls Casserole

I was looking for some hearty dishes that speak to me of fall.

This has the ingredients of cabbage rolls - seasoned meat and cabbage leaves, but is easier because you don't have to actually go to all the trouble wrapping the leaves around the meat.

Quick Cabbage Rolls
Chopped cabbage
1 pound ground beef
Diced onion
1/2 cup uncooked rice
Salt and pepper
1 can tomato soup
1 1/2 cups water
(Parmesan cheese)

But a layer of chopped cabbage on the bottom of a greased 9 by 11 inch pan. Brown the ground beef with the onion, season lightly with salt and pepper. Add the uncooked rice, and spread over the top of the cabbage. Bring the tomato soup and water to a boil and pour over the meat layer. Sprinkle the top with Parmesan cheese if desired. Cover tightly with foil and bake at 350 degrees for 1 1/2 hours.

German Chocolate Upside Down Cake

1 box German chocolate cake mix
1 cup chopped pecans
1 cup coconut
1 8 oz package cream cheese
1 pound powdered sugar
1/2 cup butter

Butter a 13 by 9 inch cake pan. Mix the pecans and coconut together and put in the bottom of the pan. Mix the cake mix according to the package and spread on top of the pecans and coconut. Melt the butter and cream cheese together and beat with a mixer until creamy and smooth. Add the powdered sugar and mix well. Pour on top of the cake mix and bake 35 to 40 minutes.

Sounds like a doozy, doesn't it?

Cabbage and my tummy have never gotten along, alas, but that German Chocolate Upside Down Cake and I could become Best Friends!

As you have probably guessed, I spend a lot of time reading recipes looking for something different. I have never seen anything like this, and I'm hoping that Jeri will try it because I've known her to take on these almost candy-bar type cakes.

I thought I invented this recipe the day I first tried to make Cabbage Rolls. (Even the clothes pegs didn't work.)

These Pennsylvanians probably got it that way, too. Julia Child has a recipe somewhere that calls for hollowing out the cabbage head and putting the stuffing inside, then cooking it whole like that. I made it once and it was very good.

My mum used to make grrreat cabbage rolls. Only way I like cooked cabbage. I'm a raw cabbage person. The smell of it cooking usually makes me throw up in my mouth.

I hope you like it. I think the cabbage under the meat would resemble cooked wide noodles.
