Buttermilk Waffles

I bought a half gallon of buttermilk on sale, so am trying some of the recipes that use it that I've got in my database. I'm making the oatmeal ones tomorrow.

Oatmeal Buttermilk Waffles

2 cups rolled oats
2 cups buttermilk
3 large eggs, lightly beaten
1/4 cup butter, melted
1 teaspoon baking soda
1/8 cup flour
1/2 cup milk

Combine the oatmeal and buttermilk in a non-metal bowl and let rest, covered, overnight in refrigerator. The following day, stir in the beaten egg and the melted butter. Combine the dry ingredients and fold them in. Stir in milk until mixture is smooth and creamy. Cook in a preheated waffle iron, about 5 to 6 minutes, until crisp and brown on the outside.

Gingerbread Waffles

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon ginger
1/2 teaspoon salt
1/4 teaspoon allspice
2 eggs
1/3 cup sugar
3/4 cup buttermilk
1/2 cup molasses
1/4 cup melted butter

Combine dry ingredients. Beat eggs and sugar until thick and foamy. Stir in buttermilk and molasses. Add to dry ingredients and stir until moistened. Add butter. Cook according to waffle iron’s instructions. Serve with sweetened whipped cream, honey-maple syrup, and warm cinnamon apple sauce.

I fancy these two recipes. I know my husband will like the gingerbread one, I think I will prefer the buttermilk one

The main reason I have a waffle iron is because I think I am going to make gingerbread waffles or chocolate waffles some day, and after all these years I've never gotten around to it.

The oatmeal waffles were really good - very tender, with a nice texture from the oatmeal, and they browned up nicely. They don't have any sugar in them and not much flour, so I think they'd be pretty healthy for a person. I used skim milk.
