Here is a good and quick recipe
Dilly Zucchini Casserole
1 cup of biscuit/baking mix
1/2 cup of grated Parmesan cheese
1 tablespoon dill weed
1 teaspoon salt
1/8 teaspoon of pepper
4 eggs beaten(I used egg beaters on this.)
1/2 cup vegetable oil
3 cups chopped zucchini
1 large onion,chopped
In a bowl,combine the biscuit mix,Parmesan cheese,
dill,salt,and pepper.Add eggs and oil:mix well.
Stir in the zucchini and onion until blended.
Pour into a greased 101/2 qt.baking dish.
Bake,uncovered at 375 degree for 24-30 minutes or until golden brown.This will served around 5 servings.
