AS all do not favor crabs, this recipee, again, is not one of mine, but one that came from a cooking magazine years ago. It ain't bad.
2 1/2 cups of shredded zucchini
1 egg slightly beaten
1 tblsp butter, melted
1 tsp prepared mustard
3/4 tsp seafood seasoning
1 cup seasoned bread crumbs
2 tblsp ov veg oil
2 tblsp chopped onion
Ina bowl, combine all, except the breadcrumbs and the oil. Once mixed, added the breadcrumgs to tighten up the mixture. Once it is to your liking, shape into the cake and add flour to the outside of the cake and fry for 4 or so minutes on each side until brown. I use Canola oil and you all can use whatever you prefer. Drain on paper towels when done and enjoy.
