Had a few green bells left and they were starting to go a little soft, so , lets make some stuffed bells. Just had the traditional a few weeks ago with rice, meat, etc. So, how about this one and it was a different taste.
1 cup of orzo, boiled in chicken broth.
6 bell peppers cut in half and parboiled
sautee some onions, garlic and top of the bell peppers that are all chopped in nature.
l5 to 20 precooked shrimp, cut into thirds.
Once orzo is done, drain off any excess broth.
In a large bowl, combine all the ingredients and add the curry seasoning, as much as you like. Add about 3-4 huge tablespoons of guava jelly. Mix all till the jelly is no longer visible.
Fill this mixture into the bell pepper halfs and place into a greased baking dish and top off each one with some cocktail sause.
Bake at 350 till internal temp is about 140 degrees and serve.
The bell peppers can also be frozen for latter use and then thaw out and microwave.
Try it and I think you will have a different version for stuffed bell peppers.
