Wilted Lettuce Salad

No, this isn't a salad gone wrong, it's an old fashioned recipe for using lettuce out of your garden. The second recipe is a spinach salad with hot bacon dressing similar to what was popular in restaurants a few years ago.

4 tablespoons sugar
2 tablespoons (about) vinegar
2 tablespoons bacon grease
Salt to taste
Garden lettuce
Crumbled bacon to taste
Hard boiled egg for garnish

In small saucepan, mix sugar, vinegar, bacon grease and salt. Heat over moderate heat, stirring, until sugar melts. Add more vinegar to taste if dressing is too sweet. Pour over lettuce, tossing until lettuce wilts. (If desired, tear lettuce into large pieces.) Sprinkle with bacon and diced egg if desired.

Spinach Salad with Hot Bacon Dressing
1 bunch of spinach
2 slices bacon
1/4 cup wine vinegar
1/2 cup olive oil
1 teaspoon Worcestershire sauce
Salt and pepper
1 hard boiled egg, chopped
Sliced fresh mushrooms (optional)

Wash and drain spinach. Cut bacon into 1 inch pieces and place in frying pan with a small amount of oil. Cook until crisp. Add vinegar, the rest of the oil, Worcestershire sauce, salt and pepper. Heat to boiling. Pour over the spinach and toss to mix. The dressing should be hot enough to wilt the spinach and give it a soft texture. Sprinkle chopped egg over the top as a garnish.

We could hardly wait for the lettuce to get ready to make the first
salad. I still love it and often use spinach instead of lettuce. I would reduce the sugar and put chopped green onions in it.
