Yes, beef stroganoff is a very tasty dish, good for company or family meals, but sometimes it'd be nice to come up with some other supper dish that's similar, but different. If you know what I mean. Okay, maybe you don't. I mean it's cooked in a skillet on top of the stove instead of baked in the oven.
Sweet and Sour Beef
2 pounds round steak
1/4 cup flour
1 cup chopped onions
1 cup water
1/2 cup catsup
1/4 cup brown sugar
1/4 cup vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
Dredge the meat in flour and brown it in oil. Remove and cook the onion in the same pan (add more oil if needed). Put the meat back in the pan and stir in the remaining ingredients. Bring to a boil, cover, and reduce the heat to a simmer for about 45 minutes. Serve over rice, noodles, or potatoes.
Frypan Casserole
1 pound ground beef
1/2 cup diced onion
1 medium green pepper, diced
1 (13 oz) can tomatoes
2 cups (or less) sour cream
2 tablespoons sugar
1 tablespoon chili powder (or to taste)
1 teaspoon salt
8 oz elbow or shell macaroni
Brown the ground beef. Add onion and green pepper and saute. Drain off grease. Add tomatoes, sour cream, sugar, chili powder, and salt. Stir in the macaroni and bring to a boil. Reduce the heat, cover, and simmer about 35 minutes until macaroni is done. Serve immediately. Serves 6 to 8.
Delicious Flavor Chicken
1 medium onion, sliced thin
1 teaspoon oil
4 chicken breasts (remove skin if you prefer)
Salt and pepper
Flour
1/4 teaspoon cumin or curry
1/2 cup apple juice (or white wine)
1/2 cup water
Over medium heat, saute the onion in the oil, stirring frequently to avoid sticking. Salt and pepper the chicken, then dust with flour. Place in the skillet and brown, turning frequently, with the onion. Sprinkle the cumin or curry powder over the chicken, and cook until tender. Mix the apple juice with the water and add to the chicken. Cover and simmer 20 minutes, stirring occasionally. Serve over rice mixed with cooked green peas.
