Spaghetti Salad

The recipes are interesting but simple and call for the sort of ingredients usually in my kitchen.



Bacon Cheddar Deviled Eggs

14 hard-cooked eggs
1/2 cup mayonnaise
1/2 cup sour cream
1 1/2 teaspoons Dijon mustard
1 teaspoon fresh lemon juice
1/4 teaspoon black pepper
1/3 cup crumbled cooked bacon
1/4 cup (1 ounce) finely shredded sharp Cheddar cheese
2 tablespoons chopped fresh chives or green onion tops

Slice eggs in half lengthwise. Remove yolks to a medium bowl. Reserve 24 white halves; finely chop remaining 4 white halves. Mash yolks with fork. Add mayonnaise, sour cream, mustard, lemon juice, and pepper; mix well. Add chopped egg whites, bacon, cheese, and chives; mix well. Spoon 1 heaping tablespoon yolk mixture into each reserved egg white half. Refrigerate, covered, to blend flavors.

Southern Style Spaghetti Salad
1 pound spaghetti, broken in half
2 cups (8 ounces) shredded Colby-Jack cheese
1 cup mayonnaise
1 (5-ounce) jar sliced Spanish olives, drained
2 tablespoons sweet pickle relish
1/2 teaspoon black pepper

Cook the spaghetti according to the package directions; drain. Meanwhile, in a large bowl, combine the remaining ingredients; mix well. Add the hot spaghetti and toss until well mixed. Serve warm.

Moving away from Mr. Food, here is another spaghetti salad recipe from McCormick Spices. It calls for 1/4 bottle of their "Salad Supreme Seasoning" but I've provided a recipe for making your own.

1 tomato, chopped fine
1 cucumber, chopped fine
1/2 green bell pepper, chopped fine
1/2 med. red onion, sliced fine
1 sm. bottle Seven Seas Viva Italian dressing (no oil)
1/4 bottle McCormick Salad Supreme seasoning
1/2 lb. thin spaghetti

Combine in large bowl, first 4 ingredients. Add Italian dressing and salad seasoning. Mix well. Break spaghetti into 2-3 pieces and cook until tender. Rinse with cold water and add to vegetables. Mix well and refrigerate at least 2 hours. Mix several times during the 2 hours.

You can sprinkle this seasoning on any salad, and it's especially good in tuna or egg salad.

Salad Supreme Seasoning

2 tablespoons Romano cheese (or Parmesan)
1 1/2 teaspoons sesame seeds
1 teaspoon paprika
3/4 teaspoon salt
1/2 teaspoon poppy seeds
1/2 teaspoon celery seeds
1/4 teaspoon garlic powder
1/4 teaspoon coarse ground black pepper
Dash cayenne pepper

Combine all ingredients in a small bowl and mix well. Pour blend into a sealed container (such as an empty spice bottle) and store chilled.

Makes 1/4 cup seasoning.

I haven't made that seasoning for a long time, but now I'm going to so I have it ready in the refrigerator. It's expensive to buy - more than $2 or $3 for a little tiny bottle.

I looove pasta salad made with sliced black olives, a couple kinds of cubed cheese, chopped bell peppers and broccoli, and salami or pepperoni and whatever else my hand falls on thrown in such as artichoke hearts now that I have a big jar of marinated ones. It's one of those things I can't stop eating, so I don't make it very often.
