Ruby Slipper Cake

Here is something different in a cake. It sounds so pretty.

Ruby Slipper Cake

1 box Yellow Pudding In The Cake Mix
1 c. Sour Cream
1/4 c. Water
1 (3 oz) box Raspberry Jello
2 Eggs
Powdered Sugar

Combine cake mix, sour cream, water and eggs in a large bowl. Beat 2 minutes. Spoon 1/3 of batter into well-greased and floured tube pan. Sprinkle with 1/2 box dry jello. Repeat layers. Top with remaining 1/3 of batter. Bake in 350 degree oven for 45 to 50 minutes. Cool 5 minutes. Remove from pan. Sprinkle with powdered sugar.

Today I was trying to clean out the refrigerator so made a beef gravy that was pretty good. I didn't brown the meat because I wanted the flavor to come out into the gravy.

Beef Gravy


1 onion, sliced
2 strips bacon, cut into 1 inch pieces
1 - 3 stalks celery, diced
Cooking oil or olive oil
Salt
1 pound chuck roast, cut into 1 inch dice
Beef, chicken, or turkey stock
1 teaspoon beef bouillon base
1/2 teaspoon ground thyme
1/2 teaspoon powdered garlic (or fresh, minced)
Cornstarch
Water
Salt and pepper
(Worcestershire sauce)

Saute the onion and celery with the bacon in the oil, sprinkled with a little salt until the onions are tender but not brown. Put into a slow cooker with the meat and stock and beef base. Cook 2 hours on high until the meat is tender. Thicken with the cornstarch mixed with cold water and season to taste.

This makes a thick gravy to be served over noodles or rice.

Ruby slippers...Ruby Cake. It sounds so good. I have been using beef broth
in my gravy. It makes it mor flavorful. I never have beef stock but should
think about making some.

I just buy this paste in jars, called Better Than Bouillon. Even I think it's too much work to make it from scratch.
