It's not necessarily done in a flash, but this is a method for freezing fresh strawberries, and probably other berries at home. The reason you would want to is that the faster they freeze the more they retain their fresh texture because big ice crystals don't build up.
Rinse medium-size strawberries and nestle in a metal bowl with paper towels between layers of towel. Put in the coldest part of the refrigerator to chill completely.
Get a good-sized piece of dry ice and use a hammer to crush it inside the bag. You might want to wear gloves when handling dry ice.
Put it in a large metal pot (it will make a noise as the coldness affects the metal pot). Stir the berries together with the crushed dry ice, using a rubber spatula. Set the pot in the cooler and close the lid.
CAUTION: Do not latch the cooler or it might explode.
When the berries are frozen hard, label your Ziploc freezer bags with today's date and don't open them out in the air, hold them down toward the bottom of the cooler so that it's CO2 they are inhaling when you open them. Don't stick your head down in the cooler because there is no oxygen down there.
Transfer to your regular freezer, and these should last many months.
