Cinnamon Roll Mug Cake

Single-serving desserts that can be quickly made in the microwave are very popular right now. I saw the title "Cinnamon Roll Mug Cake" and my first thought was of a yeast dough, but it's really an applesauce cake.

Cinnamon Roll Mug Cake

2 Tbsp applesauce
1 Tbsp vegetable oil
1 Tbsp buttermilk
1/4 tsp vanilla extract
1/4 cup + 1 Tbsp all-purpose flour
2 1/2 Tbsp packed light-brown sugar
3/4 tsp ground cinnamon
1 dash ground nutmeg (optional)
1/4 tsp baking powder
1/8 tsp (scant) salt
1 Recipe Cream Cheese Icing, recipe follows

Cream Cheese Icing
1 Tbsp Cream Cheese or Neufchatel Cheese, softened
2 Tbsp powdered sugar
1 tsp milk

Directions

Prepare Cream Cheese Icing according to directions listed, set aside. Combine all ingredients (minus Cream Cheese Icing) in a mug then whisk together with a fork until combine and nearly smooth. Microwave mixture on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds. Serve warm topped with Cream Cheese Icing.

Cream Cheese Icing
Combine all ingredients in a small bowl and whisk with a fork until smooth.

Instant Chocolate Cake

Whisk 1/4 cup flour, 5 tablespoons sugar, 2 tablespoons cocoa powder, 1 egg, 3 tablespoons milk, 3 tablespoons vegetable oil and a dash of vanilla extract and salt in a small bowl until smooth. Pour into a large mug. Microwave until puffed, about 2 minutes.
You might need to adjust the cooking time for your microwave's power - less time might be better.

This is not baked in a mug in the microwave, but I'm sharing it as an example of something that sounds really nasty. I think you'd have to be pretty hard up to make this and waste calories on it.

Two Ingredient Lemon Bars

1 Lemon Cake Mix
1 (15.75 oz can) of Lemon Pie Filling

Preheat oven to 350 degrees. In a large bowl, mix the cake mix and pie filling until moist and well blended. Do not over stir. Place in greased 9 x 13 pan. Bake for 20-23 minutes or until golden brown on top. Sprinkle with powdered sugar and serve with whipped cream.

If I had a lemon cake mix, I'd make this:

Lemon Poppyseed Cake

1 package lemon cake mix
2 tablespoons poppy seed
1 cup water
1/3 cup oil
3 eggs
Glaze:
1 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon milk
1 tablespoon butter, softened
(2 or 3 drops yellow food color)

Grease and sugar a 12 cup plastic or ceramic tube pan. In a large bowl, blend all cake ingredients by hand until moistened. Pour into prepared pan. Microwave on 50% power 8 to 10 minutes, and high 2 to 5 minutes, rotating pan 1/2 turn every 3 minutes. Or cook on high only for 12 minutes. Cool in pan directly on counter covered with a paper towel for 10 minutes. Turn onto serving plate and cool completely. Blend the glaze ingredients in a small bowl until smooth. Thin with additional milk if needed. Spoon over the cooled cake.

Me too. When I was a kid, all the ladies were making lemon cake mix, and then sweeten lemonade concentrate with powdered sugar, poke holes in the cake, and pour the glaze over it. Very good.
