Bread Machine Recipes

Here are a couple of bread machine recipes from "More Breaking Bread" by Father Dominic Garramone, OSB. This cookbook went with a cooking show on public television.

Single Loaf White Bread
Makes 1 (2 pound) loaf

1/3 cup water
1 cup milk
1 tablespoon oil
1 teaspoon salt
3 1/4 cups bread flour
1 tablespoon sugar
2 teaspoons instant yeast **

Put the ingredients into the bread machine in the order given above. Select Basic Cycle, medium/normal color setting.

** Also known as bread machine yeast, fast-rising or quick-rise.

Texas Moppin' Rolls - Bread Machine version

Makes 6 rolls.

This is a sturdy roll that stands up to barbecued brisket and they are good for moppin' up the juice from baked beans (hopefully really good baked beans). It is mixed and kneaded in the machine, then shaped by hand and baked in the oven.

1 cup plus 3 tablespoons water
1/2 teaspoon honey
1/2 teaspoon salt
3 cups bread flour
1/2 cup shredded Monterey Jack cheese
1/4 cup shredded cheddar cheese
1/4 cup minced onoin
3/4 teaspoon crushed red pepper
1 1/2 teaspoons instant yeast

Put the ingredients into the bread machine container in the order given. Select dough/manual cycle.

When the cycle is complete, remove the dough from the machine. Cover and let rest 10 minutes. Divide the dough into 6 equal pieces. Roll each piece into an oval. Place the rolls in a greased 9 by 9 inch square baking pan. Cover and let rise in a warm, draft-free place about 30 minutes, or until almost doubled. Bake in a preheated 375 degree oven for 20 minutes or until done. Remove from pan and cool on a wire rack.

These are also good sliced and used for cold cut sandwiches. For daintier rolls divide the dough into 12 pieces, but everyone is going to take two rolls anyway, so you might as well make them large.

I have to admit I've never tried those rolls, and I've never cooked a brisket, either, so maybe it's time to do both. There are a lot of ingredients in there.
