Barbecue Rubs

After you wash your chicken or other meat pieces (you DO wash your meat out of the package, I hope), massage a spice rub into it and let stand for a few hours or as long as overnight. This works even if instead of grilling it you are going to coat it with flour and fry it, similar to the secret of Kentucky Fried Chicken.

All-Purpose Rub for any meat:
3/4 cup paprika
1/4 cup ground black pepper
1 1/2 tablespoons cayenne pepper
1/4 cup chili powder
1 1/2 tablespoons garlic powder
1 tablespoon ground cumin
2 tablespoons sugar (brown or white)
1/4 cup salt
1 1/2 teaspoons dried rosemary, crumbled
1 1/2 teaspoons dried bay leaves, crumbled

Put all this in a jar with lid so you can shake it to mix it up. I used a food processor to crumble the rosemary and bay leaves. An electric spice grinder would have been better, but I don't have one and didn't feel like using the coffee grinder.

Here is one suggested to be especially suited to chicken that I haven't tried yet:

1/4 cup paprika
1 teaspoon dry or ground thyme
1 teaspoon rosemary
1 tablespoon ground black pepper
1 tablespoon sugar
1 teaspoon garlic powder
1 teaspoon cinnamon

Combine and store in a jar.

Note: I am a little surprised about the cinnamon. When I make this I will leave it out of the general mix and add just a bit to what goes on some of the chicken so I can see if I like it or not.
