Gratitude and Recipes

I am so grateful that my house is toasty and I have the right clothes for this weather. So many don't. If we can get it done today, we are going to weed out some of our coats and sweaters for the homeless shelters. They are in dire need.

I always want to cook on days when I t is cold. I baked Dilly bread yesterday and made an extra loaf for Ellie and sent
chicken and noodles home with her. For us, I made chicken
enchilada soup and although I have given the recipe before, it is so good that I will repeat myself It is easy and good and can be delicious without the chicken. It would make a good vegeterian soup by just leaving the chicken out. I warn you it is very calorie laden.

Chicken Enchilada Soup
4 chicken breasts cooked and diced or you can use canned
chicken.
1can green enchilada sauce Large size can
1can of corn
l can green chilis
1 can black beans
1 pound of Velveeta or any American cheese
l can of chicken broth
l carton of whipping cream added at the last and gently
simmered.

I also add jalepeno peppers or rotel to give it the hotness we like. Be cautious.

It is a thin soup and our favorite and if you have the ingredients can be whipped up very fast. Great for unexpected guests.
